Apple Pancakes

My little Sunday secret indulgence is scrumptious apple pancakes. If you prefer to make these a little more on the healthy side just replace half of the all-purpose flour with buckwheat flour. In summer these also are heavenly topped with fresh strawberries.

  1. Preheat over to 225. In a large bowl sift together the flour and baking soda. Add the sugar and salt and mix. Add the milk and egg yolks. Whisk in the melted butter at this point you should have a thick batter. In a seperate bowl whip the eggs whites until they hold a stiff peak, then fold in the egg whoites and add the thinly sliced apples. Let your batter rest for 10-15 minutes.
  2. In a large skillet or griddle melt a little butter over a medium heat. Check your griddle is hot enough, I usually cook a test pancake first . about 2 tablespoons of battter will make about a 5 inch pancake. Cook until golden brown, about 2 minutes on each side. Transfer your pancakes to a baking sheet and keep warm in the oven while making your next batch. Serve warm sprinkled with confectioners sugar and optional fresh strawberries.
