Baked Egg Nests

  1. Separate eggs, leaving the yolks in the shell until ready to use
  2. Olace the eggs whites in a medium bowl and add salt and pepper. Let stand for about 30 minutes to reach room temperature.
  3. Using an electric hand mixer on medium beat egg whites until stiff enough to form a sharp peak. Scrape the sides of the bowl frequently with a rubber spatula.
  4. Spoon egg whites on top of toast and and make a holloow in the middle. Place the egg yolk in the hollow and season with salt and pepper.
  5. Bake at 350 degrees until white has browned and yolks are firm,
  6. Ggarnish with a dash of paprika.
Recipe Notes

Optional: Sprinkle grated cheese over eggs before baking.
