Lemon BBQ Pork Chops
Simple pork chops recipe with a twist, flavored with BBQ and lemon.

Instructions
  1. Heat oven to 350 degrees.
  2. Place chops in cast iron skillet, sprinkle with salt and brown.
  3. Coat chops with BBQ mixture and top with 1 slice of onion, 1 slice of lemon. Cover with aluminum foil and transfer skillet to center rack of oven. Be very careful as cast iron retains heat and will be extrememtly hot. Always use caution.
  4. After 30 minutes, uncover and check the internal temperature then continue baking the chops until desired doneness, around 30 minutes. Check that the internal temperature is a minimum 145 degrees. I prefer my chops on the "well done" side to 160 degrees.
BBQ Sauce
  1. In a small bowl mix together brown sugar and ketchup. Alternately you can use a pre-made BBQ sauce.
  2. Whisk to a smooth consistency.
Recipe Notes

Serve with corn on the cob and an apple crisp for dessert. Pair with a nice Pinot Noir.
