  1. In a medium bowl add the corn, cheese, salt and pepper and mix.
  2. Heat oven to 350 degrees.
  3. Blanche the whole green peppers then Rinse and slice off the top of the green pepper and scoop out the seeds to create a cup. Spoon the corn mixture into the green peppers.
  4. Sprinkle grated cheese on top.
  5. Bake filled green pepers in a shallow baking pan filled about 1/2 inch with water. Baste once or twice during the cooking.
  6. Melt butter in skillet over medium heat. Dip the tomato slices in the cracker crumbs and sautee until both sides are browned.
  7. Serve the cooked bell pepper on top of the sauteed tomoto slice. Salt and pepper to taste.
